A 12-hour night still wants three meals in 24 hours. The trick is where the heavy one sits. Put it before the shift. Keep midnight to 6 a.m. light. Eat a small breakfast before you sleep. That is the whole pattern.

Pack before the 12. Night-shift nurses on Reddit say the same thing in plainer words: if the only food in reach is the break-room spread and the vending machine, that is dinner. Eggs, yogurt, cheese, nuts, fruit, and a sandwich are the bag that matches NIOSH's list and still works when you get five minutes.

NIOSH also repeats the Dietary Guidelines for Americans 2010 on the next page: vegetables, fruits, whole grains, and low-fat dairy more often; solid fats, added sugars, and sodium less often. That is the grocery list, not a calorie target.

Midnight to 6 a.m., and caffeine

NIOSH is blunt: avoid eating or reduce food intake between midnight and 6 a.m. The digestive tract is prepared for sleep. Eating then is tied, in that training, to gastrointestinal symptoms and to higher risk of obesity, cardiovascular disease, diabetes, and metabolic syndrome among shift workers who have not adjusted.

A 12-hour night does not always give you that choice. Lunch at 3 a.m. is often the only sit-down. Gupta and colleagues, in Chronobiology International in 2019, ran 39 people through simulated night shifts. At 00:30 they ate a meal (30% of 24-hour energy), a snack (10%), or nothing. At 04:00 the snack group did better on driving and reaction tests than both the meal group and the no-food group. The meal group reported more sleepiness. That does not cancel NIOSH. It is the same idea with numbers: if you eat in that window, keep it a snack, not a second dinner. Skipping the whole 12 is not what NIOSH wrote either. It says three meals per 24 hours, and eat more frequently when you need energy.

NIOSH on preparing for sleep, same review date, says the half-life of caffeine is 5 to 6 hours and longer in some people. Night shift workers who rely on caffeine to stay alert could consume it at the beginning of the shift and should stop several hours before the shift ends. Avoid heavy, spicy meals 2 to 3 hours before bed. After the shift, NIOSH's sleep page names a small meal with a protein and a carbohydrate, cereal and milk, if hunger will wake you.
